Coravin sets the gold standard for wine preservation. An ultra-thin needle pierces the cork and draws out your desired amount of wine, replacing it with neutral argon gas. Your wine remains as good as new — it won’t age because it hasn’t been exposed to oxygen. Winemakers have done blind tastings of two bottles of their own wines — one opened that day, one opened five years ago using the Coravin system — and even they couldn’t tell the difference. The Model Eleven is automatic with WiFi connectivity, and you can customize pouring speeds. If you don’t care about connectivity, the Model Six is the most elegant.
